About Chef Garron
Chef Garron Sanchez, the executive chef at Caprae Restaurant at Prairie Fruits Farm, brings a wealth of experience from his years working in Chicago’s fine dining scene and the Central Coast of California. A Kendall College Culinary School alum, he returned to Central Illinois to reconnect with family and community and inspires his team at Caprae with his dedication to seasonality and local sourcing. With a deep respect for the ingredients, he collaborates closely with farmers, artisans, and purveyors, ensuring that each menu reflects what’s fresh, available, and thoughtfully produced along with featuring our farm’s own award-winning goat cheese and garden offerings.

Join us as Chef Benny DelValley serves up a French-inspired meal at our first 2025 Supper Club on Saturday, Jan. 18 in the Mansion Carriage House. Chef Benny returns to kick off the 2025 Supper Club series with a French-inspired meal.
DelValley operates the Pond Street Food Truck, where he serves “Midwest Fish with Modern Flavor.” He is local, industry-taught and has proven adept at serving at both pop-up and private dining experiences.

Chefs Doug Hodge and Ian Nutting return to Allerton to create a delicious, memorable meal at the Supper Club on Friday, May 2 in the Mansion Carriage House. The evening is part of the five-dinner 2025 Supper Club series.
Doug and Ian began by slinging singularly unique hot sauces and condiments in 2021 as The Weird Meat Boyz, and then started serving “elevated drinkin’ food” out of the bar Collective Pour in 2022. Now they run a new fine dining establishment in Downtown Champaign: The Space. View the menu here.
